Vietnam’s Mid-Autumn Moon Festival (Moon Cakes)

Everyone gets one (or many) Bánh Trung Thu as gifts for the holiday. And so many are never unboxed. Instead, special friends pass them along as special holiday gifts to other special friends?

Now, certainly many Vietnamese folk must love moon cakes – literally millions are sold each year in Vietnam as the mid-Autumn Festival arrives. But, I’ve never actually seen a Vietnamese friend go out and buy one to consume it for themselves. (I’ll await the onslaught of e-mails). And I’ve seen plenty of boxes of moon cakes sit untouched, week after week, on friends’ kitchen counters until, of course, I – a foreigner – arrive for a visit and am told, You must try a moon cake.
Of course, I do. And certainly, I really have nothing against sitting down eating a heavy brick for the holidays. After all, it’s tradition!

But it must be eaten in very small slices. And best consumed over the course of the several days surrounding the Mid-Autumn Moon Festival .

Almost always heavy (thus my eating a brick reference), the ingredients comprising a moon cake varies from bakery-to-bakery, and from family-to-family. I’ve encountered numerous filling variations, involving bean pastes, ground seeds and nuts, salted egg yolk, dried fruits and shredded meats.

When I venture into American cooking sites, I always know that it will hurt ... But I can not resist it. I have accumulated a lot of crazy and decadent ideas in my favorites.
This time, I wanted to please my son. He loved the Oreo Mascarpone Cookies.

But I wanted to change. And above all, I had spotted this absolutely indecent cookie recipe, composed of 3 flavors anti regime: Nutella, Peanut butter and Oreo! How to resist?

 INGREDIENTS
  • 250 grams of peanut butter
  • 75 grams of Nutella
  • 80 grams of sugar
  • 25 grams of brown sugar
  • 30 grams of cocoa
  • 12 coarse broken Oreo cookies
  • 2 tablespoons strong coffee (if not, 2 tablespoons water)
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon baking soda

INSTRUCTIONS

  1. In the bowl of your robot (or in a salad bowl!), Mix the peanut butter, Nutella, egg, and sugars at high speed for about 2 minutes. The texture should be creamy. If necessary, stop, pick up the preparation on the edges with a spatula, and restart.
  2. Add the cocoa, coffee, vanilla, and bicarbonate. Beat again at high speed for 2 minutes.
  3. Gently add the Oreo cookies.
  4. Place in the refrigerator for an hour.
  5. Preheat oven to 170 ° C.
  6. With an ice spoon, collect balls of cookies. Place these balls on a baking sheet covered with parchment paper.
  7. Flatten them slightly.
  8. Bake for 8 minutes.
  9. When you take them out of the oven they will still be soft, that's normal. Let cool!

INGREDIENTS

  • 1/2 teaspoon salt
  • 2 eggs + 1 yellow
  • 1 teaspoon of vanilla extract
  • 16 soft caramels


INSTRUCTIONS
1 Preheat oven to 170 ° C.
2 Make a hazelnut butter: melt in the skillet and brown until browned lightly. Mix regularly.
3 In the bowl of your robot, mix the flour, baking soda, baking powder.
4 Add yeast and salt, and mix.
5 Add the eggs and the vanilla extract, and mix.
6 Form balls with an ice spoon. In each ball, insert a soft caramel, and take care to cover it with paste.
7 Place your balls on a plate covered with baking paper, flatten them lightly, put a little salt flower on each cookie.
8 Bake for 12 minutes.
